Coronation Pasta Salad

Ingredients

  •  200 g dried pasta
  •  1/4 cup mango chutney
  •  1/4 cup vegan mayonnaise
  •  40 g vegan yogurt
  •  1 Tbsp curry powder
  •  40 g raisins
  •  25 g flaked almonds
  •  3 spring onions, chopped

Method

  • Cook the pasta according to the package directions and pour into a large bowl.
  • Add the mango chutney, vegan mayonnaise, vegan yogurt, and curry powder and mix until evenly coated.
  • Add the raisins, almonds, and spring onions and stir well.
