Recipe: Russian-Style Potato Salad

This quick, simple side dish is a fantastic addition to lunches, buffet tables or barbecues. It’s also great if you’re stuck for time and need to throw something together at the last minute.

Russian-Style Potato Salad

8–10 new potatoesRussia

1 cup petit pois

1/2 cucumber, chopped

1/2 apple (any variety will do), chopped

8 cornichons or other similar pickles, diced

Vegan mayonnaise (we love Plamil brand)

  • Place the new potatoes in a saucepan filled with water and boil until soft, then drain and set aside to cool. Dice when cool enough to handle.
  • Cook the petit pois according to the package instructions, then set aside to cool.
  • Mix the potatoes, petit pois, cucumber, apple and cornichons together in a large bowl. Add the vegan mayonnaise and stir to combine.

Makes 4 servings
